This is an easy Nigerian fried rice recipe, you can follow this recipe even if you are new to Nigerian cooking. I always serve fried rice with chicken. You can either grill or fry your chicken

  • 4 Cups Rice
  • 5 Cups Sliced Cabbage
  • 1 Cup Sliced Green Pepper
  • 2 Cups Sliced Carrot
  • 2 tbsp Curry Powder
  • 2 KG Chicken
  • 300 Grams Cow Liver
  • 2 Cups Sliced Green Beans
  • 1/2 Cup Green Peas
  • 1 Cup sliced onions
  • 1/2 tsp ground chilies (pepper)
  • 200 mls Vegetable oil


  • Step by step Fried Rice Recipe
  • Set your pot on heat and add 200mls of vegetable oil
  • Allow the oil to heat, then add sliced onion (1cup), carrot and green beans. Stir all together, add the cabbage and allow to simmer for a minute while you continue to stir.
  • Add the curry powder and stir evenly (2 tbsp should do), just sprinkle all over and stir. Add the ground pepper, a seasoning cube, chicken stock, and salt to taste.
  • Taste, if you like the taste then go ahead and add the green peppers, stir and add the pre-cooked white rice. stir all together.
  • Cover the pot and allow to simmer for 5 minutes, that is how to cook fried rice the Nigerian way.
