Tried this recipe today. It was actually really good. I had thought I would need to soak the beans overnight but it didn’t take near as long. Though, admittedly it still took a long time to get the peels off (I wasn’t even able to get all of it). I did it in a blender and it turned out great. But I made waaaay too much so I guess that’s what I’ll be eating for a while 😅 .

This recipe addressed my question, I think I added too much water and also didn’t allow time for the resting and swelling. I will try again soon.
