Gizdodo simply combines well-cooked gizzards and fried ripe plantain to make a delicious dish. In contemporary Nigerian society, gizdodo is served with jollof rice and sometimes served as a snack or side dish.
You want to start by chopping the plantain, tomatoes, and onions. Chop to any size you like, I like them cubed.
Precook the gizzards and chop them using a kitchen knife.
Set a frying pan on the heat, pour in 400 ml of vegetable oil, allow to heat then fry the chopped ripe plantain to golden color.
Reduce the oil and fry the gizzards to dark-brown color.
Using the same oil, add the remaining half cup of onions, sliced tomatoes, and peppers. Allow frying for 10-15 minutes. Stir occasionally so it doesn't get burned.
Add a seasoning cube when the tomato is well fried.
Pour in the chopped green peppers, fried gizzards, and fried plantain.
Add a pinch of salt
Stir all together and taste for salt.
Allow to simmer on low heat for 3-5 minutes and you are done with this gizdodo recipe.
