Peanut Soup Recipe : How to Make Ghanian Peanut Butter Soup

Peanut soup is native to the Hausa people in Northern Ghana/Nigeria. This is an easy to make soup that I usually serve with rice balls (tuwo shikafa) or any kind of fufu (swallow).
Combine garlic, ginger, half cup of water, one onion, tomato paste, rosemary, 3 scotch bonnet peppers and blend to paste.
Strain into the meat in a pot. Sprinkle the seasoning cube and a pinch of salt.
Set on heat and let it boil for 7-10 minutes, add more water and let the meat cook till it is easy to chew. Should take 15-20 minutes. Set aside.
In another pot, combine fresh tomatoes, the remaining onion and set on heat. Add 2 cups of water and let is boil for 5 minutes.
Let it cool for a few minutes.
Transfer into a blender, add the peanut butter and blend everything to paste.
Strain into the pot containing the meat. Stir, add another cup of water, let it simmer on medium heat for 15-20 minutes.
It should thicken as it cooks.
Add extra scotch bonnet peppers for extra heat and color, I used a combination of red, green and yellow scotch bonnet peppers.
Stir, Let it simmer on low heat for 5 minutes, serve with fufu.

Peanut soup is a delicacy in Ghana. The main ingredients are peanut butter or ground roasted (peanuts)I used a combination of Chicken and goat meat for this soup.
