Egg Sauce

Egg sauce is just one of the many egg recipes existing in Nigeria. Now that I think about it, I just realized that eggs are actually very common in Nigeria. I use it for making bread, cakes, and virtually every snack in Nigeria.

Here, however, we are going to be making a delicious sauce by combining eggs and several other ingredients.

I made egg Sauce with eggs, tomatoes, peppers, onions, vegetable oil and a pinch of natural sweetener (seasoning cubes.)

Some people chose to add a handful of vegetables and fluted pumpkin (ugu) is always the most popular choice. In this recipe, I used a few slices of green pepper instead.

I usually serve this Sauce in Nigeria with yam as you can see below. That is why it’s sometimes called yam sauce. I seldom see people serve with rice. It happens though, but rarely. The sauce is delicious however you want to use it.

Egg Sauce

This one is going to be easy. If you are new to making Nigerian foods and desires to start with the recipes that are easy, I would suggest you start here. This takes just about six different ingredients and the preparation time is less than 20 minutes.

Ingredients For (Egg) Yam Sauce

Serving 2

Preparation time: 25 minutes

3 eggs.
2 spoons sliced pepper
Vegetable oil (200ml).
2 cups of sliced fresh tomatoes.
Sliced pepper to taste.
1 cup of sliced onions.
One cube of maggi or knorr.
Salt to taste.
2 spoons of Sliced Green Peppers (optional)

Tips

There are actually two ways to do this. You can decide to use lots of tomatoes and just about 2 eggs. I used 3 eggs and about two cups of sliced tomatoes, so there are more eggs in this recipe. As evidenced in the image above.

You can use 4 cups of sliced tomatoes with just two eggs; it takes just the same steps to prepare.

I wanted to make this as simple as it can be. That is the reason for the step-by-step images below. I supposed it is a lot easier to make foods if you know what it should look like at every point in time.

How to Make Egg Sauce for Yam.

Slice your tomatoes, onions, and peppers as you would find in the plate below. You can easily do this with a sharp knife and chopping board.
How to make egg sauce

Step 1

Set your frying pan on the heat and add just 200ml of oil (vegetable or olive oil), allow one minute before adding the sliced tomatoes/onions/peppers. It is best if you have a non-stick frying pan.

Allow this to fry for 10-15 minutes. Remember to always stir, you don’t want to end up with burnt tomatoes.Egg Sauce Ingredients

Once it is fried, should take 15 minutes of frying and stirring.

Step 3

Add salt to taste. Add half a seasoning cube.

Step 4

Beat the eggs in a separate plate. Add a pinch of salt to it and then pour on top of the frying tomato/onion/pepper combination. Allow a minute and then stir. Try to break the crumbs into smaller sizes.
Frying Egg Sauce

You can sprinkle a handful of fluted pumpkin (ugu) leaves if you like. Try to break further into tiny crumbs in order to achieve the image above (as served above).

Ingredients
  

  • 3 eggs.
  • 2 spoons sliced pepper
  • 200 ml Vegetable oil
  • 2 cups of sliced fresh tomatoes.
  • Sliced pepper to taste.
  • 1 cup of sliced onions.
  • 1 Seasoning cube
  • Salt to taste.
  • 2 spoons of Sliced Green Peppers optional

Instructions
 

  • Start by Slicing your tomatoes, onions, and peppers using a kitchen knife.
  • Set frying pan on the heat and add just 200ml of oil (vegetable or olive oil), allow the oil to heat up for few minutes.
  • Add the sliced tomatoes, peppers, onions and fry.
  • Add salt to taste, half of a seasoning cube. Stir to avoid burning.
  • Beat eggs in a separate bowl, add a pinch of salt and pour it into the frying tomatoes.
  • Allow the egg to fry.
  • Don't let it get burned. Try breaking into tiny crumbs so you can get an exact replica of what you see here.
  • Serve egg sauce with boiled white yams.

Please allow add that the egg sauce most time are not meant to be lumpy that is, the egg is not meant to be seen as a whole in little portions, rather, a little as in scrambled while the sauce(pepper, tomatoes and onions) itself tend to be a little bit more than the eggs used. (My views).
